Kovakkai poriyal / Ivey gourd stir fry / Tindora curry for rice

  • Kovakkai / Ivy gourd / Tindora – 250 gms
  • Huge onion – 1 sliced
  • Garlic – 10 cloves (finely chopped)
  • Curry leaves – few
  • Turmeric powder – 1/4 tsp
  • Sugar – 1/4 tsp
  • Sambar powder – 1 tsp OR purple chilli powder & dhania powder – 1/2 tsp every
  • Garam masala powder – 1/2 tsp
  • Salt & water – as wanted
  • Lemon juice – few drops (elective)

To mood

  • Cooking oil – 3 tbsp
  • Mustard seeds – 1/2 tsp
  • Urad dal – 1/2 tsp
  • Saunf / Fennel seeds – 1/2 tsp

HOW TO MAKE KOVAKKAI PORIYAL

  1. Wash and slice Kovakkai / Ivy gourd into skinny slices vertically. Put aside.
  2. Wash and chop onion, garlic finely. Warmth oil and splutter mustard seeds, urad dal, fennel seeds.
  3. Saute onion, garlic and curry leaves until onion turns clear.
  4. Add the sliced Kovakkai items, turmeric powder, sugar and saute for two to three minutes in medium flame.
  5. Decrease the flame and add the sambar powder, garam masala powder and salt.
  6. Saute in low flame for two to three minutes to coat the masala properly. Sprinkle water and canopy prepare dinner in low flame until kovakkai turns gentle and properly cooked.
